Something simple from the freezer

With three freezers full of homegrown produce, it’s a pretty regular occurrence that I delve into their depths with not a clue as to what to cook myself. This was one such occasion; but it turned out rather tasty, so here’s what transpired.

Step one
Go the upright freezer, open door, scratch head in bewilderment.
Step two
Grab a couple of bags of frozen stuff. Occasional further head-scratching optional in an attempt to ascertain what the contents might actually be.
Step three
Let a small glimmer of a smile transpire when you guessed right.
Step four
Add half a cup of our own olive oil to a large non-stick ceramic pan. Heat on a hot flame until you know it’s getting dangeroıus.
Step five
Open the first bag, which happened to be broad beans (blanched before freezing last year), and throw the lot in. Hit with a large wooden spoon so it all breaks down. Quickly stir around so that you have individual beans, not a frozen lump.
Step six
Repeat Step Five with a bag of frozen pepper (Capsicum) chunks (varied ‘pepper’ heat), and bag of frozen green cherry tomatoes.
Step seven
Mix on a high flame until things start to cook, stirring regularly.
Step eight
Pour a glug more olive oil into a mixing bowl. To that, add a heaped teaspoon of hot smoked paprika, and a heaped teaspoon of a decent curry powder. I tend to use a strong masala. Then add a good pinch of home-dried herbs such as black basil, oregano and thyme. Add one glass of water, mix it all up, and chuck it in the pan.

Step nine
Mix everything and turn down to a medium flame. Stir regularly for perhaps ten minutes. Then spear the cherry tomatoes one by one with a fork, or they’ll burn your mouth later!
Step ten
Serve hot, with a sprinkling of fresh Sicilian parmesan cheese on top. Then remember you haven’t cooked anything for the kid. Sort that out quickly, and dine whilst sharing a Star Wars movie (watched over two nights coz of bedtime).

I shouldn’t have read this while hungry, contemplating my own issues of what-to-have-for-lunch. Love broad beans and this looks delicious! Smart thinking about the spearing the tomatoes. I’m guessing you’ve learned this the hard way 😉

It’s just so cool that you not only have 3 freezers full of your own food, but that you put your own olive oil in the pan first!

And our own dried herbs…. but we still stare at each other and wonder what to cook! 🙂

Do you really use 1/2 cup (plus more) of olive oil? I reckon I’m too stingy with the oil, in that case.

To be honest Yvonne I never measure a thing. But we have 50+ litres in large vat next to the kitchen, so I guess that makes a heck of a difference!
