One of our best natural ingredients we have for a fresh salad are from the broad beans.

We only use the newest fresh leaves, and simply serve with baby tomatoes, olive oil and some dried local mountain oregano sprinkled on top. Wonderful and fresh.

I did not know you could eat the leaves. I might give that a go! I don’t have any local mountains but I do have some oregano in the garden on a slight slope- does that count?
