Dried Foods: Other Stuff

In addition to drying aubergines/eggplants in various forms, and of course peppers, we also have a few other foodstuffs that get dried and kept in the cupboard for a rainy day (literally)

Black basil… love it sprinkled on top of a tomato salad 🙂

Garden peas. I froze quite a few bags down last year, but drying also works well, and a handful can easily be thrown straight into a casserole, so couldn’t be much easier really.

Our store cupboards always have plenty of mint and thyme stashed away. But mint, especially, is so widely used in Turkish cooking that we get through plenty.

And finally…. there’s raisins, dried from a tray full of our own black grapes. that is, the ones not scoffed fresh from the vine by either us or the cows in the back field, or used to make the concentrated juice we freeze down. 🙂

  5. Do you dry those raisins in the sun or artificially. I like your store cupboard, all I manage is green tomato chutney!

      In the sun from June-September as it needs to be over 30 really to do the job… the top floor has an open area where I dry all sorts of stuff on large metal trays. We have so much stuff preserved, especially jams of perhaps 15 fruit types, pickled everything as we as dried bits 🙂
